Mango Coconut Chicken

This tropical chicken dish is packed with flavour and is perfect for a quick microwaved lunch.

The street BBQ skewer culture was amazing when I travelled to the Galapagos, but skewers don't translate well to meal prep. So, I took some liberties in creating a simple mango coconut chicken sauce with authentic flavours to keep the heat balanced when you pop this in the microwave for lunch.
